Perfecting the Breakfast Taco

If Veracruz All Natural is known for one thing, it’s their breakfast tacos. When Reyna and Maritza Vazquez decided to add some to their menu in 2010, they were some of the first to start selling this kind of dish. Their most popular was their signature migas breakfast taco, made with egg, tortilla chips, Monterey Jack cheese, cilantro, tomato, onion and avocado. By 2015, the Food Network had dubbed it one of the top five tacos in the country.

But Migas Originales isn’t the only choice patrons have for breakfast. Reyna’s crafted eight other delicious tacos for their menu. With so many recipes under her belt, Reyna’s developed some tricks to perfecting breakfast tacos. Here are just a few:

Start with a fresh tortilla: If you have the time to make them from scratch, fresh tortillas make all the difference. Flour tortillas provide maximum durability and are great for tacos with lots of toppings, while corn tortillas provide extra flavor.

Balance is key: It’s important to strike a balance with ingredient texture. For example, adding a crunchy ingredient, like tortilla chips, can compliment softer ingredients, like egg or cheese.

Never skip the salsa: Homemade salsa is a must for every breakfast taco. You can experiment with different styles and levels of spiciness to find your favorite and see which compliments your preferred taco ingredients the best.

Pair them with an agua fresca: Breakfast tacos are best washed down with an agua fresca. When it comes to this classic Mexican drink, fresh is best. Always prepare right before serving for maximum flavor. Reyna’s favorite is watermelon, while Maritza loves cantaloupe. For an extra kick to an evening aqua fresca, you can add a shot of Camarena Tequila.



Serves 2

5 oz. Camarena Silver
4 cups water
2 cups fresh fruit 
¼ cup of sugar (optional)

Peel and chop your favorite fruit into chunks, making sure to remove any stems or seeds (if applicable). Combine Camarena Silver, water, fruit and sugar (if desired) in a blender and puree until smooth. Pour into an ice-filled pitcher and serve right away.
